Smoky Chicken Wings

Ingredients:

  • 20 wings- your choice of flats, drums or both
  • Tomey's Basic Rub - equal parts of salt, pepper, garlic and onion powder 
  • add other rubs to add some heat or based on your finishing sauce
  • 1/2 stick of butter
  • 1/3 cup of Valentina Sauce (its the best)
  • Lager beer
  • 1 teaspoon red pepper flakes (adjust for desired spiciness)

Instructions:

  1. Melt butter and pour into 1/2 restaurant pan
  2. Add Valentina sauce, a tsp of rub and mix with butter.
  3. Place chicken wings in pan add more rub on top.
  4. Add beer until wings are just 50% covered by beer (important)
  5. Put pan in smoker on 250 and smoke for 25-30 minutes
  6. Flip wings over and reseason and back in smoker for 25-30 minutes
  7. Now 3 options to finish, first is on a hot grill or in a fryer or finally back in smoker.
  8. Hot grill - toss wings in your favorite sauce (Tomey's No.1) and then onto hot grill for 3-5 minutes per side - EAT!!
  9. Fryer - drop wings for 3-5 minutes then toss in sauce - this is the best method
  10. Smoker - toss in sauce and back on the smoker for 15-20 minutes.
  11. Serve with celery, carrots and Blue cheese or Ranch.

Enjoy, since we have braised the wings in butter, rub and a hot sauce they will be super tender and tasty. Then finish them the way you want and it you will have a crowd pleaser.
